I am a professional chef with Type 1 Diabetes and have been working in commercial kitchens since 2005.
In 2017 I was diagnosed with Type 1 Diabetes. That year, the restaurant I run at a private club was hitting its stride. I had turned the kitchen into a highly functioning operation, established a respected beer dinner series with local breweries and the restaurant was packed every evening with a waiting list. I had a menu that was the most creative I had written and was just in an amazing space. Looking back now, I have no idea how I pulled it together and managed to stay creative. I had been ill for a year prior with a misdiagnosis of Type 2 Diabetes and was prescribed awful medications to control it. I was eating very little due to the nausea created by the medication, irritable and exhausted all of the time. I lost 20 pounds and my blood sugar was never under control. I made it through to a final diagnosis on June 7, 2017, Type 1 Diabetes.
Type 1 brought me into a whole, new world. I am still navigating this world more than three years later, to re-learn how to eat, prepare and redefine my relationship to food while living with Type 1. My goal has been to remain creative as a chef, but to also explore how food fuels us and to find healthy-ish ways to revisit some of my favorite dishes that I have created in my career.
I encourage you to follow along, most of what I will share will be my relationship to food. I am still exploring alternatives to dishes that have been my favorites during my professional career, looking at how to put a healthy twist on most of them. However, not everything will be absolutely healthy or low-carb, because even with Type 1, you can have occasional days of indulgence.
